Ever since having baby girl, I haven’t really tried too many new things. No experimenting. Repetition just makes things easy. Same grocery shopping list, same lunch routine, no thinking and the process only gets quicker. The catch is to definitely find something healthy, otherwise I’ll be craving food in no time just to make up for all the nutrition little baby Anabelle is taking from my body.
This started as my sisters just making an extra smoothie for me when I could find time to eat. But it soon turned into my well craved lunch and I found a way to fit it in my everyday schedule without assistance every time.
1 avocado (I use one when I’m hungry so the good fats help fill me up and only half when I don’t feel like much)
2 cups/large handfuls of spinach (3 if your blender can handle it)
coconut water (enough to blend the concoction)
frozen fruit to flavor (my favorite to include are pineapple chunks! The one pictured had raspberries and pineapple.)
2 scoops whey protein vanilla
- Place the avocado, spinach and some coconut water in the blender and blend until smooth.
- Add the fruit and blend. Shake out any bubbles and add more coconut water if it gets stuck. Taste test and add more fruit if needed.
- Add the whey protein. Blend just until mixed.
- Pour and enjoy!
