Banana Pancakes

I hate ripe bananas, so lately I only buy one or two at a time so that they never get the brown spots. But when I saw this super simple Banana Pancake recipe I bought extra so that I would have some leftover for the weekend. And let me tell you! This is my new favorite recipe! I don’t know if I’ve ever been this excited about something successful in the kitchen!

This is what need:

Yeah… That’s it! One egg per banana.

Recipe:

  1. Mash the bananas.
  2. Wisk in the eggs.
  3. Cook on medium heat until bubbles start coming up in the middle and then flip.

The cooking mashed concoction looked something like this…

Kind of weird but O.M.G. I loved them! Ate like eight of them ;) But really it was like three eggs and three bananas. No added sugar or flour. My kind of healthy deliciousness!

I topped them with a little bit of maple almond butter and a tiny bit of syrup (bananas already had enough sweetness in the cakes for me) and it was just so good! Might be a new February phase! Until I get sick of them at least!
