I hate ripe bananas, so lately I only buy one or two at a time so that they never get the brown spots. But when I saw this super simple Banana Pancake recipe I bought extra so that I would have some leftover for the weekend. And let me tell you! This is my new favorite recipe! I don’t know if I’ve ever been this excited about something successful in the kitchen!
This is what need:
Yeah… That’s it! One egg per banana.
Recipe:
- Mash the bananas.
- Wisk in the eggs.
- Cook on medium heat until bubbles start coming up in the middle and then flip.
The cooking mashed concoction looked something like this…
Kind of weird but O.M.G. I loved them! Ate like eight of them
But really it was like three eggs and three bananas. No added sugar or flour. My kind of healthy deliciousness!
I topped them with a little bit of maple almond butter and a tiny bit of syrup (bananas already had enough sweetness in the cakes for me) and it was just so good! Might be a new February phase! Until I get sick of them at least!
